內容

課程概述

透過對台灣家禽產業的認識了解台灣家禽與蛋品產業現況與發展,並經由家禽的生理、營養及飼養管理,對家禽產業有入門的基本常識,同時對蛋品的營養及消費有深入介紹。

Through the knowledge of the poultry industry, we can understand the current status and development of the poultry and egg production in Taiwan. In addition, through poultry physiology, nutrition, and feeding and management, the students will have basic knowledge of the poultry and egg production. The nutrition and consumption of eggs and poultry are also addressed.

授課內容

本課程分成家禽學與蛋品的加工及消費兩個主題。依照教學進度每週逐項進行,包括家禽生理、飼養及蛋品之理化學等,之後也進行雞蛋加工品之介紹。
