課程概述 |
本課程介紹乳牛的飼養管理與牛乳生產的基本概念,包含乳牛品種、選拔、營養需求、飼養管理與乳品生產等項目,並介紹國內外乳業的現況及未來展望,使學生對乳品生產有基本的認識。 This course introduces the basic concepts of feeding management of dairy cattle and milk production. Topics including breeds of dairy cattle, selection, nutrition, feeding management, dairy production and processing are discussed. The current status and future prospects of domestic and international dairy industry are addressed, so that students have basic understanding on dairy production and consumption. |

本課程分成乳品生產與乳品的加工及消費兩個主題。依據教學進度每週逐項進行,包括乳牛生理、飼養及乳品理化學、微生物等,之後也進行乳品之製作介紹。 |
